  2.                    KATHY HIRDLER'S FIRE CAMP CHILI

  5. 100 lb  pinto beans
  6. 48      large onions, chopped
  7. 4 C     jalapeno chilies with juice
  8. 40 lb   meat (ham, sausage, pork, bacon ends, ground beef, etc)
  9. 4 C     chili powder
  10.         salt to taste
  11.  
  12. Soak beans overnight, then raise to a boil on high heat.
  13.  
  14. Add all ingredients and simmer until tender (about 6 hours).
  15.  
  16. Add water as necessary.  Stir occasionally.  Makes 60 gallons.

  18. Serves 1200 approximately.
